Rheology is the study of how matter flows, primarily in a fluid state. It also studies how "soft solids" or solids deform when they respond with plastic flow instead of deforming elastically.
The name rheology comes from the Greek word for flow. It was coined by Eugene Bingham, who also founded the Society of Rheology in the USA. 
Rheology is applied to fluid materials or materials that have a time-dependent response to stress. Flow is usually measured using shear. 
Rheological properties, like viscosity, are important in manufacturing and processing. For example, viscosity testing is an important rheological parameter for both production and quality control of cosmetics. 
Rheology modifiers or thickeners are also used to achieve targeted stability and flow in paints and coatings formulations.
