Introduction

Dairying is a branch of agriculture that involves the breeding, raising, and use of dairy animals to produce milk and dairy products. It's also known as dairy farming. 

Dairying has a long history, dating back to the seventh millennium BC in many regions of Africa and Europe. In India, milk supply comes from millions of small producers, mostly located in rural areas. These farmers usually have one or two milch animals, such as cows and/or buffaloes. 
Dairy is the largest agricultural commodity in India, contributing 5% of the national economy. 
Dairy foods can be good sources of protein, calcium, B vitamins, and vitamin D. Dairy products that are fermented, like yogurt and some cheeses, are lower in lactose and contain healthful gut bacteria. 

Skills possessed by a Dairying technician include:

- Has knowledge of different breeds of cows/ buffalos and handle new born calf.
- Knows how to groom animals and maintain sanitation of sheds.
- Observes & identifies symptoms of certain specific disease in animals.
- Prepares feed and fodder for dairy.
- Has knowledge of allied trades tools and basic machinery used in electrical and mechanical maintenance.
- Uses and maintains boilers and associated system used in the dairy industry.
- Uses and maintains refrigeration, air conditioning systems and instruments used in the dairy industry.
- Carries out various tests by collecting milk samples and determines the specific gravity of milk samples.
- Counts different types of microorganisms in milk samples and carries out COB and MBR tests.
- Has knowledge of  the process of pasteurization of milk.
- Prepares sterilized, toned, doubled toned milk, butter, ghee and other dairy products.
